Lecithin is a term used for a group of fatty substances occurring in plant tissues, egg yolk and animal, whose main constituents are fatty acid, phosphoric acid, glycerol, triglycerides, phospholipids, choline and  glycolipids.

Lecithin is present in a various biological matters such as brain tissue and venous blood of humans, gall, roe and eggs of fish, brain of chicken and sheep.
